The famous Niçoise salad reimagined as a potato salad. I didn't include anchovies and used sun-dried tomatoes, but in season, good fresh tomatoes would be perfect! It's very good with a vinaigrette made with strong mustard!

Serves 4 servings
  • 4eggs
  • 1 1/3 poundsfirm potatoes (about 600 grams)
  • 3 1/2 ouncesfresh green beans (about 100 grams)
  • A fewblack olives
  • 1 cantuna in water
  • 10-12sun-dried tomatoes in oil

Steps

  1. 1

    Cook the potatoes and trimmed green beans. Boil the eggs for 10 minutes to make hard-boiled eggs.

  2. 2

    Peel the potatoes and slice them into rounds.

  3. 3

    In a large dish, arrange the potato slices, halved green beans, olives, quartered eggs, sun-dried tomatoes, and drained, flaked tuna.
