I love eggs benedict, so I make it often, and I decided to try making my own hollandaise sauce as well.

Note - Your microwave and the time of year will affect the heating time, so first heat for about 20 seconds, then mix, and then continue heating a little at a time if necessary. Recipe by Motonogi Ami

Ingredients

2 servings
  1. 40 gramsButter
  2. 1☆Egg yolk
  3. 1 tsp☆Lemon juice
  4. 1 tsp☆White wine

Cooking Instructions

    Melt the butter in the microwave. This takes about 40 seconds at 500 W in my microwave.

    While you wait, combine the ☆ ingredients in a heatproof bowl and mix lightly. Add Step 1's melted butter and mix well.

  3. 3

    Heat uncovered in the microwave for 20~30 seconds. See the notes.

  4. 4

    Remove from the microwave and mix really well until it becomes the same consistency as mayonnaise and it's done.

    You can use it on Eggs Benedict or on warm vegetables.
