Ingredients

  • 2large egg yolks
  • 1 tbspDijon mustard
  • 2 tspfresh lemon juice
  • 2 dashCayenne pepper
  • 1salt and pepper to taste
  • 1dill to garnish
  • 1 1/4 cupunsalted butter (about 270g)
  • 1 tspwater

Steps

  1. 1

    Combine all ingredients except butter in blender

  2. 2

    Slowly heat butter in pan, being careful not to burn it

  3. 3

    Once butter is hot, turn on blender and slowly add all of the butter

  4. 4

    Blend until emulsified (about 20-30 seconds using my Bamix)
