Easy Homemade Tzatziki

Peel the cucumber, remove the seeds from the center, and grate it into a large bowl. Sprinkle with salt and set aside for 10 minutes.

Place the grated cucumber in a clean towel and squeeze well to remove as much liquid as possible.

In a large bowl, add the cucumber, minced garlic, olive oil, Greek yogurt, vinegar, and a little salt. Mix well with a spoon until everything is combined and the flavors come together.

Blend the garlic with the olive oil until combined, then mix the garlic oil with the other ingredients using a spoon.

Store the tzatziki in the refrigerator and always serve it cold. Enjoy!
