Ingredients

  1. 230 g- 1.5 cups cake flour
  2. 275 g- 2 cups all-purpose flour
  3. 5 g- 1.5 tablespoon salt
  4. 8 g- 2 tablespoons corn starch
  5. 6 g- 1/2 tablespoon baking soda
  6. 280 g- 1.25 cups melted unsalted butter
  7. 285 g- 1.25 cups brown sugar
  8. 115 g- 1/2 white granulated sugar
  9. 2egg
  10. 3egg yolks
  11. 165 g- 2 cups walnuts
  12. 450 gchopped chocolate

Cooking Instructions

  1. 1

    In a bowl combine both flours, salt, corn starch and baking soda.
    Whisk.

    In a separate bowl, add both types of sugar and add the melted butter while whisking.
    Add one egg at a time followed by the egg yolks.
    Once it gets homogeneous, add the flour mixture.
    Add the chocolate and walnuts

    Chill for at least 45 minutes covered in plastic.
    The longer you chill them, the taller they will be.

  4. 4

    Bake at 220 °C for 10 - 13 minutes or until golden brown.
    Use baking paper.

Ok. Bye but pretty sure that is waay to hot for 13min. His cookbooks say 350 F. I make them on non-stick at 325 F and they’re great.
