Soak white peas for 5 to 6 hour. Then boiled in cooker with turmeric powder, salt and hing until 4 to 5 whitsle.

In mixer bowl take pudina, coriander leaves, chilly and ginger grind altogether.

Take 2 glass water in big bowl add this chutney, black salt, cumin powder, lemon juice and panipuri masala and mix altogether. If anything less as per your taste add and adjust.

For meethi chutney in hot water soaked tamarind. Remove the seed of dates. Remove the seed of tamarind and make pulp. Take one mixture bowl put tamarind pulp, dates, jeggary 1 pinch salt and 1 tsp white sugar and water grind altogether.

Now open the cooker and add little chopped coriander leaves on masala.

Take one puri break in middle fill masala, sweet chutney and pani and enjoy hot, spicy, sweet and sour panipuri.
