Start by hydrating the soy in boiling water with salt and bay leaves for about 10 minutes until softened. Remove, let cool, and squeeze out the water.

Soften the chiles in boiling water. Once soft, blend them with vinegar, cinnamon, allspice, cumin, cloves, garlic, half of the onion, and salt until you get a sauce.

Sauté the other half of the onion with the red bell pepper cut into strips. Add the soy and mix for 5 minutes. Add the sauce through a strainer. Mix well and check the flavor.

Time for the tacos! Heat the tortillas, add the soy with a few drops of lime, chopped onion, chopped cilantro, and your preferred sauce.
