Had some potatoes and challenged myself to make bhajia using what I had on hand. Didn't have food colour, but they still turned out delicious. Let me know what you think 😊

Had some potatoes and challenged myself to make bhajia using what I had on hand. Didn't have food colour, but they still turned out delicious. Let me know what you think 😊

Peel and boil your potatoes, for 6-8 minutes. Not long enough for them to cook through. Drain and leave to cool while you prepare your batter

Finely chop your onion and cilantro, mix with ginger and garlic. Measure your dry ingredients (depending on the amount of potatoes you're using) I used 1 1/2 cups of all-purpose flour. Add your spices, and add to your onion cilantro mix. Add water and stir till you reach the right consistency.
(I added a tiny bit of baking powder to the flour, less than an 1/8 tsp, just to get an extra crispy coat. Totally optional😊) - 3
Slice your potatoes, not too thick.
Use a slice yo make sure you have the right batter consistency, should be just thick enough to stick to the potatoes (pic 3) - 4
Coat potatoes and deep fry till done
