Make Krispy Kreme Doughnuts at Home

I don't think I'll be able to eat the real doughnuts, so I referred to a magazine clipping to make these.

Check the oil temperature before deep-frying. Make sure that the doughnuts don't turn out oily, but rather crispy. Recipe by Tarosan

Ingredients

16 servings
  1. 200 gramsBread flour
  2. 50 gramsCake flour
  3. 50 gramsKatakuriko
  4. 30 gramsSugar
  5. 4 gramsSalt
  6. 1 tspInstant dry yeast
  7. 1 tspBaking powder
  8. 190 ml1 egg and milk
  9. 50 gramsShortening
  10. 1fresh oil Frying oil
  11. For decoration
  12. 1as much as you want Icing, melted chocolate, etc.

Cooking Instructions

  1. 1

If you make this in a bread machine, add all of the ingredients in the machine and stop after the first rising.

  2. 2

If you are making this in a food processor, add in the dry ingredients first, and then the yeast. Next add the sugar, and pour the egg-milk mixture.

  3. 3

Continuously run the food processor for 1.5 minutes.

  4. 4

If you're using a food processor, take the dough out and for the first rising, put in a bowl and cover it with plastic wrap. It will take about 45 minutes at 104℉ (40℃).

  5. 5

Once the first rising is over, divide the dough into 16 portions, roll into balls and then let sit for 15 minutes.

  6. 6

Once it's all done, press flat with your hands and make a hole in the center. You can also use a small cookie cutter to make the hole. On 12 cm squares of parchment paper, put them on an oven tray and arrange as shown for the second rising. Once again, let them sit for 45 minutes at 104℉ (40℃).

  7. 7

After it has risen, fry at 350℉ (180℃) until both sides are golden brown!

  8. 8

Be careful! If the heat is too low, they will absorb the oil and become too oily.

  9. 9

While still hot, sprinkle some powdered sugar, or drizzle with icing or melted chocolate.

  10. 10

Fluffy, chewy, melt-in-your-mouth fried foods are the best. If you chill them, all they need is 10 seconds in the microwave and they have that freshly baked taste again.

  12. 12

I sprinkled cherry blossom petal sugar on these.
