These delightful little bignet or doughnuts, are a great and speedy dessert to make that will please everyone. This recipe is of a simple batter, that you can flavour with orange or lemon zest, or maybe add some chocolate chips.

These delightful little bignet or doughnuts, are a great and speedy dessert to make that will please everyone. This recipe is of a simple batter, that you can flavour with orange or lemon zest, or maybe add some chocolate chips.

Whisk the eggs and sugar until pale, add your flavouring and continue whisking on a low speed. Add your milk and oil and finally the flour and baking powder sieved together. The consistency will be sticky, don’t be alarmed it needs to be. Let rest the batter for half hour and fry in vegetable oil at about 150/160 degrees turning them continuously. Low and slow!!
Serve coated with sugar and cinnamon or make them naughtier, like I did, with a drizzle of maple syrup.
