Glutinous Rice with Chicken (Lo Mai Gai)

Wash the rice and soak it in water for overnight.

Soak the mushroom in warm water for 10 mins, reserve the water.

Marinate all the ingredients (including mushroom) and mix them all well.

Then remove the mushroom from the marinate, add corn flour to the marinate. Marinate over night.

Next day. Remove the water and use just enough water to cover the rice. Steam the rice for 15 mins on heat 7.

Prepare the boil egg (medium heat with lid cover cook for 10 mins).

Once the rice is steamed then add the sauce ingredients to the rice and mix well.

Prepare a few small rice bowl, add marinated chicken, pork, egg, mushroom and Chinese sausage at the bottom, topping with the rice, press it down.

Place the bowl in the steamer and before you steam them, add 1 tbsp of mushroom water onto each rice bowl.

Steam the rice for 30 mins on heat 7.
