This aloo palak is a side dish from north Indian cuisine made by stir frying potatoes and spinach. It is a healthy and delicious vegan dish made with minimal use of spices. It can be eaten with roti, paratha, Poori or even rice.
Steps

Peel, Wash and chop onions, ginger, garlic, green chilli and tomato. Grind in mixer.

Wash and chop spinach. Pressure cook till 2 whistles. Let pressure releases automatically. Grind it on pulse mode when at room temperature.

Heat ghee in a wok. Add cumin seeds and when cumin seeds splutter put grinded paste and saute till ghee separates. Mix all dry masale. Add spinach puree. Saute for 5 minutes. Add chopped and fried potatoes and mix. Cook for 2 minutes and then switch off the flame.

Serve hot with chapatti, parantha or puri or rice.
