In a bowl, combine the flours, sugar, and yeast. Mix well. In another bowl, mix the warm water, warm milk, and sunflower oil. Gradually add the flour mixture to the liquids, mixing until you get a smooth, even dough. Knead until the dough is soft and elastic. Let the dough rise until doubled in size.

Take the dough and place it in a greased and floured baking pan. Let it rise for another 20 minutes. Prepare an emulsion of water and olive oil. Use your fingers to make dimples in the dough, then brush with the water and oil emulsion. Sprinkle with coarse salt and rosemary.

Bake in a preheated oven: bake at 375°F (190°C) in a conventional oven for 25 minutes, or at 350°F (180°C) in a convection oven for 25 minutes.
