For the dough add flour and salt in a bowl and mix well. Now add water to it and knead a soft and smooth dough. Knead it for a good 10 minutes. Dough should be very soft and elastic so that the filling didn't come out at the time of rolling. Once get the perfect dough cover it and rest it for 30 minutes. These are the ingredients of filling which are chopped. Clean and wash the cauliflower and grate it in the grater. Grate only the florets of cauliflower.

In a big bowl add the grated cauliflower florets followed by chopped garlic and ginger. Then the spring onion greens and whites along with all the spices mentioned above in the ingredients section with chopped coriander leaves. Now those all very well and taste it to adjust the spices and the filling is ready. To make it more colourful and healthy you can add deseeded tomatoes and grated carrots to it. Make sure there is no water in the cauliflower.

I will tell you 2 ways of making parathas. Once the filling is prepared and the dough is rested make tennis ball size rolls of dough and roll it by hand and make a well of it then add the filling in it and close it from all sides. Then again roll it by hand and press it gently to take out all the air from it then roll it very gently otherwise the filling will come out. This is the 1st way now the 2nd way roll out 2 same size chapatis then add filling on 1 chapati and flatten it.

Now place the 2nd chapati on top of it and seal the edges with the help of a fork or by hand. Then place it on a hot griddle to fry. Flip it after 2 minutes then add oil on it. Flame should be on medium. After a minute again flip it and add oil on that side too. Cook it pressing from all the sides and with it gets a beautiful golden brown patches on both the sides then take transfer it to a plate. Like so make all the parathas.

Serve hot with yoghurt, pickles or chaach or the way you like and enjoy with your loved ones.
