Kaju gathiya ki sabzi

In a pan Heat 2 tablespoon oil. Then add in sliced onions and saute it for 3 minutes on medium heat.

As soon as onion changes it colour or it becomes golden in colour, add in the chopped tomatoes. Saute till it softens.

Once tomatoes are soft switch off the flame. Let it cool down. Then make a fine paste from this.

In a pan heat ghee and add cashews and saute it for 2-3 minutes on slow flame or it changes its colour to golden brown. Now take it out in plate.

In a pan heat oil and add in cumin seeds, cloves, cinnamon stick and bay leaf. Let it cook till it changes its colour. As soon as it changes its colour add in turmeric powder and asafoetida on slow flame. Add in some kashmiri red chilli powder.

Mix it well. Then add in the tomato onion paste on slow flame.

Mix and saute it till oil separates. Then add in green chillies and salt.

Then add in cumin coriander powder and sabji masala powder. Mix it well and saute till oil separates.

Add 2 cups of water. Mix and let it cook till bubble formation starts. Then add in fried kaju and let it cook for 3-4 minutes.

Then add in sugar. As it is cooked add in coriander leaves. Mix and cook for 2 minutes.

Switch off the flame. Then add in gathiya. Mix well

Mix it and serve it immediately. Kaju gathiya sabji is ready to serve.
