In a pan heat 1 tbspn oil, keep the flame low and add ½ cup very finely chopped cabbage, ½ cup very finely chopped carrot, 1 onion finely chopped, ¼th cup capsicum very finely chopped.

Saute for a minute. Add very little salt and saute again for another minute till veggies are slightly cooked.(Do not put too much salt as the sauces going in the veggies too have salt in them)

Add 1 tspn Soya sauce, 1tspn Schezwan Sauce, stir well and remove from heat. Let the filling cool down.

Method for Making Momos
Now in a bowl take ¾cup maida (flour) Add water gradually and Knead into a soft dough. Now add 1 tspn oil and Knead the dough again till all the oil is absorbed nicely. - 5
Now divide the dough into two portions. Roll out one portion and further divide into 6 -7 smaller portions.

Make them into small rounds of measuring 1"(inch)in diameter. Now roll them out into flat discs, measuring 3"(inch) in diameter.

Place this disc on the palm and put 1 - 1½ tspn of the filling in the center.

Start to fan folds from the edges. Do this for half circle and then join it with the other half to form a crescent shape.

Now take the two edges pointing out, and bring them together, to shape them into cut money bags. Prepare the rest of the momos this way.

Bring water to boil in a steamer. Grease the steamer plate, and place all the momos one by one. Cover it with a lid and let it cook in low heat for 10minutes. Remove the cover and check the momos. They should be translucent and should have a nice glaze on them. (if they look undercooked then steam them for 1- 2 minutes more.)

Preparing Devil Sauce.
Now heat a non-stick pan. Add 1 tspn of oil. 8-10 finely chopped garlic, 1 green chilli, 2 tbspn tomato ketchup, ½ tspn soya sauce, ½ tspn Schezwan Sauce, ½ tspn chilli flakes. Stir it well. Add 30ml water and give this a quick stir and let it simmer in low flame for about a minute. - 12
Place the steamed dumplings one by one. Give the Momo a quick toss and coat it well with the devil sauce. Put finely chopped Coriander leaves. Stir it once more.

DEVIL MOMOS are ready to be served!
