Crush crackers to rough powder and mix them with butter and sugar. Best by hand. Don't melt the butter! You can let it soften in a room temperature for a few minutes.

Put the mixture into the baking form. Space it evenly. I put a baking paper at the bottom of the form, but it's not mandatory.

Mix sugar, eggs and cheese (and cottage cheese, cottage cheese makes it lighter, because both mascarpone or philadelphia are like 50% fat).

In this phase, you can add any flavours you want. Do you like chocolate? Add a few spoons of cocoa powder. Do you like coffee? Make small but extra strong coffee and add it in. Lemon cheesecake? Add a teaspoon of lemon juice. Even adding of fruit jams is possible. Just make sure not to make the mixture too liquid. If liquid ingredients is added, never use more than 50ml.

Whip the cream and gently mix it with the cheese mixture. Use spatula.

Pour the mixture on the cracker crust in your form and bake it for 50 minutes at 150°C.

When baked, leave it to rest for an hour. Then add topping if you want to. Again options are limitless. Fruit jams, melted chocolate, fresh fruits, slices of apple in caramel...

Leave it in the fridge for a couple more hours before serving.
