Cooking Instructions

Place the peppers in the air fryer basket, spray a little oil, and cook for about 15 minutes at 360°F. Check the cooking 2-3 times and stir the peppers to ensure they cook evenly.

Meanwhile, bring a pot of water with a little salt to a boil. As soon as the water boils, crack an egg into a small bowl. Using a spoon, create a whirlpool by stirring the water in the pot quickly. Pour the egg in quickly and continue stirring for a few seconds until the egg white has gathered around the yolk.

Scoop the egg out with a slotted spoon and set it aside in another small bowl. Repeat the process with the second egg.

Plate the peppers (I served them with Jasmine rice), season with salt, and top with the poached egg, garnished with a sprinkle of black pepper and smoked paprika.

I wanted to make an easy poached egg to put on eggs benedict. If you make a poached egg in a pan there is a way to make sure that the white doesn't leak everywhere but it's much easier in the microwave ♫It really is easy and I do recommend this method.The heating time will vary depending on the model of your microwave so please adjust it accordingly and to how well-done you want your eggs (anywhere between 50 seconds - 1 minute 20 seconds).☆ You can replace the mug with anything of a similar size and shape.
