Grilled Black Bigorre Chorizo with Fresh Thyme and Roasted Garlic

Place the unpeeled garlic cloves in a chorizo dish (I brought mine from Spain)

Preheat the oven to 350°F (180°C). Make 2 cuts with a small knife on each side of the chorizos

Lift the skin

Insert a small sprig of thyme under the skin, leaving a bit of thyme sticking out

Repeat the process on the second chorizo

Place the chorizos on the baking dish and bake for 15 minutes

Turn the chorizos halfway through cooking

Remove the garlic cloves from the oven and place them in a small dish
- 9
It's ready! Serve with small slices of toasted bread to spread the roasted garlic. Enjoy! 😋
