Steps

Scoop the filling out of the middle of the baked potato into a large bowl. If it is cold, it may help to score it in zig zags with a knife before you do this.

Blanch the green beans in boiling salted water for 3 minutes, then drain through a sieve and run under cold water. Place onto a tea towel to dry.

Slice beans finely.

Add the beans along with the other ingredients into the bowl with the potato (all except the sweet chilli sauce or vegetable oil)

Mash and squeeze the mixture to get it to form a ball.

Break off small amount (between the size of a golf ball and a snooker or pool ball) form into balls and then squash into patties.

Heat the oil in a skillet or frying pan.

Fry the fritters for 10—12 minutes, turnly carefully during cooking. Ensure they are cooked through and hot before serving by cutting one in half.

Serve with sweet chilli sauce for dipping.
