" Vegetable Masala Khichdi" is a very popular one-pot meal and ultimate comfort food that's cooked in every Indian home and is prepared with rice and lentils. It has a medley of flavourful spices and a goodness of vegetables. It is a simple easy healthy and hearty Indian meal.

Wash and rinse moong dal, red massor rice together. Soak for 20 minutes in water then drain and keep aside.

Now heat oil in a pressure cooker over medium heat. Add all dry spices to the oil and saute till getting a nice aroma.

Immediately add in onion and green chilies and saute till onion turns translucent.

Now add chopped tomatoes and ginger paste. Saute and cook for about 2 minutes, till smells go away and the tomatoes become mushy.

Add all veggies and mix well. Now add turmeric powder, red chili powder mix well.

Then add rice-dal mixture and mix well and cook for 2-3 minutes.

Add required water and salt and close the cooker with lid, cook for 2-3 whistle (or as per your pressure cooker you are using), And immediately turn off the flame.

Open the lid once the pressure subsides from the cooker.

In the meantime heat, a pan with 1 tbsp ghee adds 1 tsp cumin seeds, 2 broken dry red chilies, and 1/2 tsp red chili powder. When the cumin and dry red chilies start to crackle switch off the flame and pour it over the khichdi.

Now serve it hot with 1 tbsp ghee.
