Ingredients

  1. 1 cupcoconut milk (250 ml)
  2. 3 1/2 tablespoonsmassaman curry paste (50 grams)
  3. 1 1/2 tablespoonspanang curry paste (20 grams)
  4. 1/3 cuppalm sugar (80 grams)
  5. 1 tablespoonconcentrated tamarind paste
  6. 1/3 cuproasted peanuts, ground (50 grams)
  7. 1/3 cuproasted cashews, ground (50 grams)
  8. 1/2 teaspoonsalt

Steps

  1. 1

    Pour the coconut milk into a pot and heat over medium. Add both curry pastes and stir until well combined. Cook until the coconut milk starts to separate and release oil.

  2. 2

    Add the palm sugar and stir until it dissolves completely. Add the ground peanuts and ground cashews, stirring until the sauce thickens slightly.

  3. 3

    Season with tamarind paste and salt. Taste and adjust seasoning as desired.
