Ingredients

  • forRice-
  • 1 cuprice
  • 1 tspjeera
  • 3-4 tspoil
  • as required Whole masala
  • ForTomato Concasse Sauce:
  • 1 cuptomato puree
  • 1 tspchopped garlic
  • 1/2 cupchopped onion
  • 3-4 tspchopped celery
  • 2 tspchilli paste or chilli Sauce
  • 1 tspsugar
  • As per tasteSalt to taste
  • For Assembling the biryani-
  • 1 cupmix veggies (onion, tri-colour bell pepper, tomatoes)
  • 2cheese cubes
  • 1 1/2 tsporegano
  • 1 1/2 tspchilli flakes

    Tomato Concasse Sauce:
    Heat oil.Add garlic, chopped onion n celery till colour change. Now add strained tomato (boiled) puree, chilli paste, sugar. Make the paste thick. Store in freezer for 1 month and In freeze for a week.

    Rice:
    In pan heat the oil and add jeera. After crackling it add whole masala, cooked rice and salt. Place it aside.

    Take one flat glass and microwave safe vessel. Spread the rice evenly. Spread concasse sauce. On the top arrange veggies and grate the cheese on it. Sprinkle chilli flakes and oregano on it. Bake this in preheated oven at 180° for 10 mins.

    Now heat the coal on gas and place this very hot coal in the vessel of the biriyani and pour ghee on it. Quickly close it with the lid. Let it remain closed for 10 minutes. So it gives Smokey flavour.
    Served hot.
