Okara Cookies in a Microwave with Dashida Flavor

I put this as a microwave version recipe in Easy Oven-baked Okara Cookies without special tools. COOKPAD staff asked me to make this as a separate recipe since this version is made without sugar.

Our microwave is small so I use a small (18 x 25cm) plastic bag. If you use a bigger bag, you can roll the cookies out thinner and reduce the cooking time maybe?
Take the browned cookies out of the microwave oven and just keep microwaving the still soft ones, or turning the dough over, until all the cookies are crunchy. Recipe by Nekozame

Ingredients

  1. 50 gramsFresh okara
  2. 1 tspBeef dashida

Steps

  1. 1

    Put all the ingredients in a plastic bag and mix well. Press the mixture over the plastic bag and bring it together into a dough.

    Place the dough on a chopping board, and roll it out over the plastic bag using a rolling pin as thinly as possible. Cut the dough into pieces of your desired size over the plastic bag. (Your knife won't get dirty this way.)

    *To transfer the dough to a baking sheet * Cut the plastic bag open. Place a piece of kitchen parchment paper and something flat (such as upside-down baking sheet or chopping board) over it.

    ②Hold the chopping board on the bottom of the stack and flip everything over. You can transfer the dough onto a baking sheet without damaging it this way. Remove the plastic bag.

    Cook in a 500 to 600 w microwave for 5 minutes.→Open the microwave door and let the steam out. Cook it again if needed - watch it for doneness. (Cook for 5 to 10 minutes in total).

    If using an 800w microwave, heat for 2 minutes. Open the door to let the steam out, and reduce to 500 or 600 w and heat for 30 more seconds. Repeat this process as needed.

  7. 7

    When the cookies are crispy and brittle they are done. When you touch a cookie and it's still soft you have to cook it again. The dough will get crispier as it cools down.

  8. 8

    Whatever the wattage, the thin parts burn easily. Don't leave the microwave while it's cooking!

  9. 9

    You can make a big batch and keep them in the freezer. They're good 'emergency snacks' when you're on a diet. If you eat them with plenty of liquids you can stave off your hunger pangs.
