Ingredients

2 servings
  • 1 1/2 cupssweetcorn
  • 1/2red onion finely diced
  • 10cherry tomatoes, quartered
  • 1 tbspfresh parsley or coriander
  • Dressing
  • 1lemon, juiced
  • 2 tbspextra virgin olive oil
  • 1/2 tsphoney
  • Salt and pepper
  • 1 tspdried chilli flakes

Steps

  1. 1

    Prepare the veg and whisk together the dressing ingredients. Season the dressing with a generous pinch of salt and pepper.

Looks very yummy. I think Cilantro would also be good in place of parsley 🤔
