This salad is to go on the side of turkey burgers and Mexican rice. If I’d had coriander I’d have used that rather than parsley but it’s nice with either #4stepsmax

1/2red onion finely diced

1 tbspfresh parsley or coriander
Dressing
1lemon, juiced
2 tbspextra virgin olive oil
1/2 tsphoney
Salt and pepper
1 tspdried chilli flakes

Prepare the veg and whisk together the dressing ingredients. Season the dressing with a generous pinch of salt and pepper.

Mix together the salad vegetables and the dressing and serve at room temperature.

Looks very yummy. I think Cilantro would also be good in place of parsley 🤔
