Ground Beef Tacos

Everyone loves tacos. This is a simple recipe but packed with flavor. I prefer soft flour tortillas to the hard corn shells. Be sure to buy a “taco holder” as it makes it easier to build the taco and also makes for a nice presentation.

Ingredients

2-3 people
  1. 1 lbhamburger meat
  2. 1onion diced or 3 green onions diced
  3. 1jalapeño diced (keep seeds if you like heat)
  4. 3 clovesgarlic
  5. 2-3 TbspTaco seasoning (I bought seasoning but you can make from scratch; see recipe below)
  6. 1 tspblack pepper
  7. 1/2 tspsalt
  8. 1/2 cupDiavalo sauce, tomato sauce or diced tomatoes
  9. 9Flour tortillas
  10. Toppings
  11. Chopped lettuce
  12. Grated cheese of your choice
  13. Chopped tomato, pico de gallo, or salsa

Cooking Instructions

    Add 1 Tbsp oil to skillet. Over low to medium heat, add onion and jalapeños and cook until softened. Add garlic and cook for 30 seconds.

    Add ground beef to skillet. Constantly stir and break up the hamburger into small pieces. Cook hamburger through.

    Add taco seasoning, black pepper, salt and diavolo sauce to skillet and thoroughly mix.

    Heat flour tortillas. I like to place in a plastic bag with a damp paper towel and microwave for 20 seconds on high.

    Prepare toppings.

    Add beef to tortillas, then cheese, lettuce and tomato. Serve and enjoy.

    To make taco seasoning mix the following:
    2 tsp chili powder
    1.5 tsp ground cumin
    1/2 tsp paprika
    1/2 tsp red pepper flakes
    1/2 tsp black pepper
    1/2 tsp salt
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/4 tsp dried oregano

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
