The khaman is a soft ,fluffy, light , sweet and savoury snack, originated from Gujarat. This all time snack I'd prepared with gram flour/chickpea flour/besan and spices by steaming the besan batter to get a cake that is sweet, savoury and delicious too.

The khaman is a soft ,fluffy, light , sweet and savoury snack, originated from Gujarat. This all time snack I'd prepared with gram flour/chickpea flour/besan and spices by steaming the besan batter to get a cake that is sweet, savoury and delicious too.

In a grinder jar take ingredients up to cornflour and plus twice to mix everything. Cornflour binds with gram flour and keeps the net formed intact even though the khaman cake cools down.

Sieve the gram flour so that air is incorated and make the gram flour light. Add the spicy water. Mix well. Add 1/4 cup water in batches to get a flowing consistency of the batter. Cover and allow to rest batter for 10 minutes to rise.

Meanwhile to make tempering/tadka, heat oil in tadka pan. Add mustard seeds and allow to splutter.

Add sesame seeds, green chilli, hing and curry leaves.
Add 1/3 cup water and sugar. Bring to boil. The tadka is ready. Grease the baking plate.

Add baking soda to besan batter with1 tbsp of water. Mix with batter in one way. The batter becomes fluffy.

Sift to greased pan and steam in a steamer for 15 minutes. Allow to cool. Sift to a plate. Cut into pieces and pour the tadka over the khaman pieces. Serve and enjoy.
