Hummus is one of the most popular dish from Middle East. Classic Hummus is delicious and nutritious dip prepared from cooked chickpeas, tahini paste, lemon juice, garlic, olive oil and jeera. It is served as a dip along with pita bread, or used as a spread in falafel sandwich. Homemade Classic Hummus is very easy to make, thick, smooth, creamy, and delicious.

Trick for the smoothest Hummus is to remove the skin of chickpeas. The amount of garlic, lemon juice, jeera powder, tahini paste, olive oil can be altered according to one's liking and preference. Hummus can be made spicy by adding spicy paprika powder, jalapeno, pepper powder or chili powder.

Ingredients

4 Persons
  • 3/4 cupChickpeas
  • 1/2 tspBaking soda
  • 2 tbspTahini Paste
  • 2 tbspLemon juice
  • 2Garlic cloves
  • as per taste Salt
  • 1/2 tspCumin powder
  • 2 tbspOlive oil
  • Tahini Paste :
  • 2 tbspSesame seeds
  • 1 tbspOlive oil

Steps

    Take 3/4 cup chickpeas in a bowl, wash and soak in water for 8 hours or overnight along with baking soda. Soaked chickpeas approximately yields 1 cup chickpeas.

    Soaking chickpeas in baking soda makes the skin soft. So peel the skin and pressure cook chickpeas with water until well cooked and mushy. Alternatively pressure cook and then peel the skin of chickpeas (Removing the skin makes the hummus silky smooth). Drain the chickpeas, reserve water to blend hummus and few chickpeas for garnish.

    For tahini paste : Take sesame seeds in a pan and dry roast on low flame until golden.

    In a mixer jar take roasted sesame seeds along with 1 tbsp olive oil and grind to a fine paste. (you can make it in large quantity and store in refrigerator)

    In a blender take cooked and peeled chickpeas, blend to coarse paste. Add in chopped garlic cloves, lemon juice, 2 tbsp tahini paste, jeera powder, salt, olive oil and blend. Add required amount of reserved water and blend to get a smooth hummus. Check for seasoning and adjust. (Any ingredient can be added extra or less depending on your liking)

    Transfer Hummus into serving dish and spread with a spoon making circular patterns.. Place few chickpeas, parsley in the center and drizzle olive oil, jeera powder and paprika powder.

    Serve delicious and silky smooth Classic Hummus with pita bread, falafel and salad. I have attached the recipe for pita bread.
