Different version of curd rice with vegetables and tanginess of tamarind and spice's.
Steps

Heat oil in a pan and add cumin seeds and mustard seeds.
Add curry leaves and dried red chillies and stir.
Now add onion and stir for 1 minute. - 2
Add chopped vegetables and stir fry for 2 minutes and then add tomato and 1 tsp salt.Stir and cover with lid for 2-3 minutes..

Then add chilli garlic paste, red chilli powder and peanut chutney in it and mix well.

Add some water, stir and add curd.
Mix well.
After one boil, add steamed rice in it and mix well. - 5
Let it cook for 4-5 minutes, till water gets absorbed.
Serve in a bowl or plate. - 6
Put some tamarind chutney on top and sprinkle some peanut chutney.
Garnish with fresh coriander leaves and red chillies.
Serve hot.
