Banana and Cocoa Cupcakes

I wanted to make simple and easy cake.
If you want to make a plain cupcakes, omit the banana and cocoa powder and add 100 g [50 g] of sugar. It's no problem if you don't add milk. Recipe by YURINA

Cooking Instructions
- 1
Mash the banana with a fork.
- 2
Melt the butter or margarine in a large bowl for 20 seconds in a 900 W microwave, add the sugar and mix well.
- 3
Add a beaten egg and mix, followed by vanilla extract and milk, and then mix again.
- 4
Add the mashed banana and mix well once more.
- 5
Combine the flour, baking powder and cocoa powder and sift into the mixture. Mix until the lumps have disappeared.
- 6
Pour the mixture into paper cups (if using side dish cups, use size 9) and bake in an oven preheated to 180°C for 25 minutes.
- 7
For those that don't want the cupcakes to puff out too much, put the paper cups in something like a pudding mould and they should come out I put mine in so that they become a bit taller.
- 8
Finished!
- 9
I omitted cocoa powder from the mixture and halved the recipe for 10 cupcakes.
- 10
If you aren't using cocoa powder, mix 1 teaspoon of lemon juice to the mashed banana. This will stop browning.
- 11
If you leave out the banana, the cupcakes won't be as sweet so slightly increase the sugar or else the bitterness from the cocoa powder will be overwhelming.

I wanted to make scones, but realised that I didn't have enough cake flour. I tried mixing bread flour, banana and other ingredients together, poured the mixture into moulds, baked it in the oven, and I ended up with tasty cupcakes. If you aren't using a food processor, combine the egg, sugar, melted butter, milk and crushed banana into a bowl in that order, and mix with a whisk at each addition. Add the dry ingredients last, and mix in a cutting motion.Adjust the baking time according to your oven. Recipe by Maria358 cookpad.japan -

Banana, Pineapple, & Coconut Cupcakes Banana, Pineapple, & Coconut Cupcakes
Made these for a summer party, wanting something light and fresh and fruity. I ended up winging the batter and it came out absolutely amazing (super moist, dense, and sweet and vanilla but not overpowering). I decorated them with the perfect amount of icing, and was shocked at how all the flavors combined so well! I will definitely make these again!!! gabriellam
