Steps

When you filet Pacific saury, sardine, or horse mackerel, keep the backbones. Cut the backbones into pieces.

Wipe off the excess water with a paper towel. Line a plate with the paper towel, arrange the backbones on the towel, and lightly sprinkle with salt.

Microwave for 1 minute.

Remove them from the microwave, flip them over, and lightly sprinkle with salt again.

Microwave again for about 1-3 minutes until they become crispy.

Arrange them on top of shiso leaves on a plate, serve with sudachi citrus fruit, and they're done ♪
