Cake has become an important part of any celebration. We can make so many kind of cakes but chocolate cake is everyone's favourite. This chocolate sponge cake is smothered with chocolate ganache which makes it really really delicious. I have flavored this cake adding fresh orange juice and orange zest to make it refreshing and different from the usual chocolate cake we have normally.
Steps
- 1
Take all-purpose flour, cocoa powder, baking powder and salt in a bowl and sieve it. Preheat oven at 180 degree for 10 minutes.
- 2
Add sugar to melted butter or oil and mix it very well. In another bowl, add yoghurt with one tablespoon of water and whisk it well. Now add vinegar and baking soda to the yoghurt mixture and whisk it so that the foam will appear.
- 3
Now in the flour mixture, add yoghurt mixture, sugar mixture, orange juice, orange zest and orange essence. mix everything very well. Mix everything quickly to make a smooth and lump free cake batter.
- 4
Pour prepared batter in a greased baking tin and tap the tin lightly so that air bubbles will come out. Now bake the cake at 180 degree for 35 to 40 minutes. Check with the help of a knife if the cake is done or not. If the knife comes out clean, the cake is ready otherwise it needs to be baked for a few more minutes.
- 5
Let it cool down for 20 to 30 minutes at room temperature. Now take it out from the tin and put it on a wire rack so that it does not become soggy. Cover the cake with thick cloth and let it get completely cool for 5 to 6 hours.
- 6
While the cake is cooling down, prepare chocolate ganache. Chop chocolate compound into small pieces and put it in a bowl. Now add cream to a heavy bottom pan and bring it to a boil. Now pour the cream to the bowl with the chocolate and let it sit for 1 minute. Now with the help of a spoon gently stir it until everything is mixed completely. Our beautiful shiny chocolate ganache is ready. No let it cool down completely and then keep it in the refrigerator until needed.
- 7
When the cake cools down completely, cut it into two slices. Now take out the chocolate ganache from the refrigerator and whisk it with the help of a whisk for two to three minutes so that it becomes thick. Now take one part of the cake and apply chocolate ganache on it evenly. Now cover it with another part and cover the cake fully with chocolate ganache. You can decorate it with fresh orange slices and mint leaves. Keep it in the refrigerator until required.
