These idlis are made in stainless steal tumblers with regular idli batter, this idea emerged from traditional karnataka khotto idlis, it's woven jack fruit leaves basket, when jack fruit leaves were not available people started to steam idlis in tumblers to get the same shape as, khotto.. that's how it all started....

Ingredients

  1. 4 cupsidli rice
  2. 1 cupurad dal/black gram
  3. 1 tspfenugreek seeds
  4. as per tastesalt
  5. 1/4 tspbaking powder
  6. as neededtumblers

Steps

    Wash and rinse rice, and urad dal & methi seeds, (fenugreek seeds) soak rice and urad dal separately for about 6 hours

  2. 2

    Transfer urad dal and methi seeds to blender add little water and blend to a bhi.smooth batter, take out in big vessel, now grind rice to little coarse texture adding little water and salt as required, add this to urad dal batter and give a good mix with your clean hands, close the lid and let it ferment for about 8-9 hours

  3. 3

    Add 1/4 tsp baking powder to the fermented batter give a gentle mix..apply some ghee to inside of the tumblers so that cooked idlis won't stick to the tumblers..and it gets easy to demauld..fill the 3/4 of tumblers with batter and place it in the steamer and steam it for 15-20 minutes..

    Let it cool down run the knife in the edges to release the idlis, put tumblers upside down on plate tap gently on top, idlis comes off easily, transfer them to serving plate....

    Serve soft spongy tumbler idlis with chutney/sambhar...
