Easy Pork Shoulder Kakuni (Simmered Pork Cubes) with Leeks

I created this easy and delicious dish without using string, parboiling, and with the minimum amount of seasoning.
Cutting the meat into bite-size pieces at the beginning removes the need to slice it at the end.
The taste is not too sweet. Please adjust the amount of the seasonings to your liking.

Steps

Cut the leeks diagonally.

Chop the pork shoulder loin into large bite-size pieces (2 bite-size?) Sprinkle salt and pepper on both sides.

Brown the surface in a pan.

Transfer to a pot, and add sliced ginger.

Put leeks on top, pour the ☆ ingredients, and turn on the heat. Bring to a boil.

Cover with a lid, and simmer for 20 ~ 30 minutes over low heat. Take off the lid, and continue simmering until the liquid is reduced by 1/2, then it's done♪

Garnish with the white part of the Japanese leeks.
