Courgette Baked Orzotto

I often make when I get loads of green veg in my veg box, have made before with leeks, broccoli, spinach etc. I like making something similar when I have people over as it's quite low maintenance once in the oven. I used to really struggle to get hold of orzo in my local supermarkets but now can buy from tesco locals.

I often make when I get loads of green veg in my veg box, have made before with leeks, broccoli, spinach etc. I like making something similar when I have people over as it's quite low maintenance once in the oven. I used to really struggle to get hold of orzo in my local supermarkets but now can buy from tesco locals.

Dice the onion and cut 1 courgette into small chunks. Add to an oven tray with the garlic, a spoon of butter, seasoning (I added salt, pepper, a bay leaf, thyme and a chilli) and a drizzle of olive oil. Roast for 15 mins at 180 degrees Celsius

Add your winter greens, orzo (I use a large handful per person), white wine and stock then put it back in the oven. The orzo will need about 25/30 mins to cook, I tend to check on it every 10 mins to see if it needs more water/if it's ready.

When the orzo looks/tastes nearly ready (after about 25 mins) add a handful of frozen peas and return to the oven for 5 mins.

Meanwhile toast the pine nuts in a frying pan until lightly browned. Also delicious with toasted hazelnuts or almonds instead

Grate the second courgette and the parmesan, add to the oven tray and return to the oven for another 3 mins.

Remove from the oven and serve with the pine nuts and fresh herbs. I used parsley here but also really like with mint and lemon juice
