So it’s fair to say we’re in summer now! And what more of a perfect way to celebrate it with this delicious and classic dessert - Eton Mess! 🍓

Put 150g of strawberries into a blender or food processor with half tablespoon of the icing sugar. Blend to form a smooth pureè

Whisk the double cream and remaining one and a half tablespoons of icing sugar together until soft peaks form when you remove the whisk (they should about hold their shape!)

To assemble, crumble 6 meringues and add to the cream (you could also add some chopped strawberries!). Fold in lightly, then very briefly stir in the strawberry purée to make swirls in the cream (as you spoon the mess into bowls it will ripple more).

Divide between 6 bowls or add to one large bowl! Enjoy outside after a summer dinner 💕
