Schezwan chutney is a popular Indo-Chinese condiment made with red chilies, garlic, soya sauce, vinegar and Sichuan peppers. It gets the name from the use of Sichuan peppers in the preparation of this sauce. ... Authentic foods from Sichuan cuisine are super-hot, spicy and pungent.
But as Sichuan peppers are not available here, I made this chutney with the dry red chilli available here. It's super tempting and you can use it as condiment as well as sauce to prepare any dish like Schezwan fried rice, Schezwan chicken etc etc.

Ingredients

  • 1 cupsdried red chilli
  • 2 tablespooncooking oil
  • 2 tablespoongarlic (finely chopped)
  • 1 tablespoonginger (finely chopped)
  • 1/4 cupwater
  • 1/2 teaspoonblack pepper (crushed)
  • 1 tablespoonwhite vinegar
  • 2 tablespoonsoy sauce
  • 1 tablespoonsugar
  • 1 tablespoontomato sauce
  • as per tastesalt

Steps

    Firstly, soak dried red chilli in hot water for 30 minutes or till they turn soft.

    Discard the water and blend to smooth paste adding water if required. keep aside.

    Now in a yok, heat 2 tablespoon oil.

    Saute chopped garlic & ginger for a minute.

    Next, add in prepared red chilli paste.

    Saute for 2 minutes, so that chilli gets cooked well.

    Now add 1/4 cup water to adjust consistency.

    Cover and simmer for 10 minutes.Make sure to cook the sauce till oil floats on top.

    Now add in crushed pepper, vinegar, soy sauce, tomato sauce, sugar and salt.

    Mix well making sure everything is combined well. Cook further 2 minutes.

    Spicy and delicious schezwan chutney is ready now. Trannser to a staralized glass jar, so that you can store it.

    You can serve schezwan sauce as a dip with chips or fries or can be used as sauce to prepare any Indo-Chinese dish.
