Glazed Sweet Potato with Pecans

Ingredients

  1. 4sweet potatoes, cubed
  2. 1/3 cupchicken stock
  3. 3 tbspbutter, divided
  4. 1/3 cupbrown sugar
  5. chopped pecans
  6. cinnamon

Cooking Instructions

  1. 1

    Heat 1 tbsp unsalted butter. Add cubed sweet potato to pan on medium high heat for 10 minutes stirring.

  2. 2

    Reduce heat and add in stock, cover for 8 minutes stirring.

  3. 3

    Heat remaining butter. Add sugar and cinnamon stirring. Add water or stock if you want it thinner.

  4. 4

    Drizzle over potatoes and add chopped pecans. Mix together
