Honey Glazed Sweet Potato Cornbread

Cooking Instructions

Preheat oven to 350. Add two tbs of butter to a large cast iron skillet or 9x13 pan and place in oven to melt.

Add brown sugar, nutmeg and cinnamon to mashed sweet potatoes. Mix with handmixer or whisk.

Beat two eggs into mixture one at a time

Melt 6 tablespoons of butter and add to the potato mixture. Mix only until incorporated

Sift flour, salt, baking powder, and baking soda together. Add to sweet mixture along with cornmeal.

Add vanilla and buttermilk.

Pour batter and into hot buttered skillet. Sprinkled with cinnamon

Bake for 25-30 minutes or until no batter shows once fork is inserted.

Melt tbs butter and brush on cornbread. Drizzle with honey. Cut and serve!
