Ingredients

  2. 2 cupswhole milk (about 480 ml), unsweetened
  3. 1/2 cupsweetened condensed milk (about 130 ml)
  4. 1/3 cupsugar (about 80 grams)
  5. 2 teaspoonsvanilla extract

    MAKE THE CARAMEL:
    Combine 1/3 cup sugar (about 80 grams) and a little water in a saucepan. Heat until the sugar dissolves and turns a deep amber color.

    MAKE THE FLAN:
    • Gently whisk the eggs together (do not beat vigorously).
    • Add the whole milk and sweetened condensed milk, stir to combine, and warm the mixture (do not let it get hot).
    • Pour the milk mixture into the eggs and gently whisk until smooth (avoid creating bubbles). Add the vanilla extract.
    • Strain the mixture twice for the smoothest texture.

    STEAM THE FLAN:
    • Preheat your steamer.
    • Pour the custard into ramekins and cover each with a cloth or towel.
    • Steam over very low heat for 30 minutes. Every 10 minutes, release steam and wipe condensation from the lid.
