Egg-free Grated Apple and Banana Muffins

I created this recipe because I wanted to make an easy cake using an over ripen banana and an apple, which was given to me as a gift.

If you can mix the mixture without kneading, the rest is easy. I used melted margarine this time, but you could use vegetable oil or melted butter as well. Use whichever you like. When you are using vegetable oil, use 25 g instead of 30 g. Recipe by Tomomaru

Ingredients

  1. 200 gramsPancake mix
  2. 1/2Apple (with skin and core removed)
  3. 1Banana (peeled)
  4. 30 gramsMargarine

Cooking Instructions

    Melt the margarine in the microwave. Preheat the oven for 180℃.

    Mash the banana with a fork. When it's mostly mashed, you can stop.

    Add the grated apple. I grated it over the bowl. Then mix in.

    Add the pancake mix, and fold in. Briefly mix without kneading.

    Add the melted margarine, and mix without kneading, then the mixture is ready.

    Pour into the muffin cups, and bake in the oven for 25 ~ 30 minutes. I used 7 cups this time. Fill about 60% full.

    And done. These muffins are full of sweet and tart apple and banana flavor.
