Steps

Wash the matumbo well and cut into small pieces.

Boil with garlic and salt till tender. (1 hour plus)

Prepare your ingredients.

Fry onions in a sufuria. When it starts browning add the boiled matumbo. Fry for 2-4 mins.

Add the blended tomatoes. Stir and cover to cook. Add salt at this point.

When tomatoes are well done, add the capsicums and stir. Cook for 3 mins.

Add 1/2 cup of water. Cover and let it simmer for few minutes.

Add dhania. Serve with ugali.
