Steps

Firstly, rinse and soak rice for 30 minutes and keep it aside.
Cut paneer into small cubes and keep it ready. - 2
In a grinding jar add ginger, garlic, 1/2 onion, green and red chilli, coriander leaves and mint leaves, grind to make a smooth paste by add 1-2tbsp water.
Keep it aside.
Chopped and grind all tomatoes to smooth. Keep it ready. - 3
Heat 2tbsp ghee in a pressure cooker. Splatter mustard seeds, bay leaves, cardamom, cinnamon, and clove. Keep the flame on low-medium.

Add remaining chopped onion, when onion becomes translucent add beans and carrots stir and cook for 5-7 minutes. Further, add prepared paste, mix and cook till the raw smells goes. Then add turmeric powder, Kashmiri mirch powder, Cummin powder and coriander powder. Mix all together and cook for 2-3 minutes.

Now add tomato paste mix and cook for 4-5 minutes. Then add Soaked Rice, salt, roasted Cashews and paneer cubes.
Combine everything and add some coriander and mint leaves.
Cook for another 3-4 minutes. - 6
Add 1tbsp ghee mix and add 1 & 1/2cup water. At this point adjust the salt. Keep the flame on medium-high. Pressure cook for one whistle.
Turn off flame. Let it rest for 10 minutes or till it releasing its pressure.
Open the lid, Paneer Masala Pulao is ready. - 7
Serve hot with raita. I accompanied Pulao with onion raita and cucumber salad.
