Fennel seeds are scented and sweet to taste. They have a unique marked-out smell when used in sweet, savory dishes including curry, kachori, or pancakes. Fennel seeds are also believed to help indigestion. Many people like me love to have roasted fennel and coriander seeds after the main meals. Chewing fennel seeds is thought to help in digestion and prevents gas.

It's a traditional sweet pancake dish in Odisha where using fennel seeds(pan Madhuri)is a must. It really increases the flavor and taste of pancakes. I have taken puree of apple and banana along with flours and beetroot and cinnamon powder to prepare these healthy pancakes with lovely color.

Ingredients

8 pancakes
  • 1/3 cupbuckwheat flour
  • 1/3 cupwhole wheat flour
  • 1/4 cupfresh curd
  • 2 tspfennel seeds
  • 1/2 cupbanana and apple puree
  • 1/2 cupbeetroot puree
  • 2 Tbspcane sugar
  • 1/2 tspsalt
  • 1/2 tspcinnamon powder
  • As requiredAdditional ingredients
  • 1 tspfennel seeds
  • as requiredChopped banana
  • As required Sliced apple
  • 1 Tbsphoney

    Mix both the flours and curd and mix well with require amount of water to make a thick batter. Cove and rest for 30 minutes.

    In the meantime make a puree of apple, banana, and beetroot. After 30 minutes mix the puree, fennel seeds, sugar, salt, and cinnamon powder to the batter. Mix well adjusting water and sugar as well.

    Grease the hot pan with oil or butter. Spread a ladder of the batter, spread a little more fennel seeds, cover, and cook on low to medium heat.

    It takes nearly 3 to 4 minutes to roast a pancake on low heat to make it delicious with the flavor of fennel seeds.

    Serve hot the delicious pancakes with honey and chopped fruits.
