You can have this done in time for dinner even if you don't start cooking until your husband comes home. I was happy to come up with a simple and basic western-style dish. No need to go buy a can of demi-glace sauce, the sauce thickens nicely on its own while simmering.
If you use a Teflon-coated pan, then clean-up is pretty easy.

Cut the chicken into large bite-sized pieces and flavor with salt and pepper. Slice the onions and break up the mushrooms.

Heat some olive oil in a pot and cook the onions. Once they've wilted, add the chicken and cook until both sides brown.

Add the red wine, ketchup, sauce, and sugar, and bring to a gentle simmer. Add the mushrooms and continue to simmer. Simmer until the sauce reduces by half.

Adjust the flavor with soy sauce, salt, and pepper. Transfer to a serving plate and it's ready.
