Ingredients

  1. 1 cancorned beef
  2. 2small onions, finely chopped
  3. 2small tomatoes, finely chopped
  4. 2small green bell peppers, finely chopped
  5. 4large eggs
  6. Salt
  7. Black pepper
  8. 3 tablespoonsoil

Steps

  1. 1

    Heat the oil in a pot over medium heat.

  2. 2

    Add the onions and cook for 2 minutes until they soften.

  3. 3

    Add the tomatoes and green bell peppers.

  4. 4

    Season with a pinch of salt and black pepper, then stir.

  5. 5

    Cook for 2 minutes, then add the corned beef and stir.

  6. 6

    Cook for 5 minutes, then transfer the mixture to a casserole dish.

  7. 7

    Crack the eggs on top and sprinkle lightly with salt and black pepper.

  8. 8

    Bake in the oven until the eggs on top are set.
