Carefully prepared shira-ae is delicious, but this simply made version turned out surprisingly rustic and tasty If you use a pre-made sesame sauce, it can be quickly seasoned; making it easy to prepare even a gourmet style shira-ae!

To drain the tofu, some methods rely on boiling or microwaving, but they compromise the flavor of the tofu. When making shira-ae, although it may be cumbersome, take the time to drain it properly. However, if you drain too much of the water, it will become dry and crumbly, so drain it lightly. Recipe by Heartful Kitchen Rei

Ingredients

3 servings
  1. 1Carrot
  2. 1/2 blockFirm tofu
  3. 1 tbspToasted sesame seeds
  4. 2 tbspGround sesame seeds
  5. 1 1/2 tbspSugar
  6. 1/3 tspSalt
  7. 1/2 tspMiso
  8. If using pre-made sesame sauce
  9. 4 tbspSesame sauce
  10. 1/2 tspMiso

Cooking Instructions

  1. 1

Drain the tofu by breaking it into large pieces and place into a colander. If you're in a hurry, cover it with a small plate!

  2. 2

Julienne the carrot and parboil in a pot of boiling water with salt (not listed in the ingredients) to desired tenderness, then drain in a colander.

  3. 3

Add the sesame and seasonings to the drained tofu and mix well. There's no need to use a grinding bowl to mix; just stir it with a spoon or fork.

  4. 4

To add a bit of color variation, I used black sesame seeds.

  5. 5

Once the shira-ae tofu mixture base is well seasoned, add the carrots. Gently toss so the carrots don't break.

  6. 6

Go easy on the sugar; the carrot gives a mild and delicious natural sweetness to the shira-ae. Season to taste.

  7. 7

[Homemade sesame condiment] You can make a shira-ae tofu mixture base by simply combining this with miso and drained tofu..
