Traditional Moroccan Bread - Frenna

Frenna bread is one of my favorite! it's a flat bread with amazing taste, soft and fluffy inside with thin crust outside. it's traditionally baked on a flaming pebbles in a public oven known as Frenna. it easy and fast and doesn't require hours of rising.
If you love someone, make them Frenna bread.

Ingredients

4-6 servings
  1. 450 grall purpose flour
  2. 50 grspelt flour
  3. 1 tbsp.instant dried yeast
  4. 1 tbsp.sugar
  5. 350 mlfresh water
  6. 1 tbsp.olive oil
  7. 1/2 tbspsalt

Cooking Instructions

    In a large bowl place all the ingredients and knead the dough until it's well combined, it will take you a minute. cover the bowl with cling film, and leave to proof in a room temperature for 10 minutes.

    With wet hands fold the dough 4 folds like an envelope. cover and leave at room temperature to proof for 20 minutes.
    You should repeat on Step #2 another 2 times. that will give you the total of 3 times of folding and proofing in 1 hour.

    place the pebbles in a baking tray. right after the second folding, you heat the oven with the pebbles or Chamotte to 250c for at least 50 minutes.

    Split the dough into 4, place on oiled surface, shape and leave for 10 minutes.

    Bake on a flaming pebbles for 8-10 minutes
