Ingredients

Serves 2 servings
  1. 2boneless chicken thighs
  2. Garlic
  3. Ginger
  4. Chili pepper
  5. Fresh basil (Thai basil preferred)
  6. For marinating
  7. Soy sauce, rice wine
  8. For the sauce
  9. Soy sauce paste
  10. Soy sauce
  11. Sugar
  12. Rice wine

  1. 1

    Marinate the chicken thighs with rice wine and soy sauce for 10-20 minutes.

    Prep the ingredients: Slice the ginger, mince three cloves of garlic, slice the chili pepper (use half if you want it less spicy), and rinse the basil leaves with water.

    Pan-fry the chicken thighs until cooked through, then set aside.
    In the same pan, sauté the ginger and garlic.
    Cut the cooked chicken thighs into large pieces using kitchen scissors.

    Add the chicken back to the pan.
    Add the sauce ingredients:
    1 tablespoon soy sauce
    1 tablespoon soy sauce paste
    1 capful of rice wine
    1 tablespoon sugar
    Stir-fry everything together, then cover the pan and let it simmer for a bit.

    Add sesame oil and basil, then stir-fry.
    Add another capful of rice wine.
    (Add the chili pepper at this stage if you want it less spicy.)

    Transfer to a plate and serve.
