Bombay ice halwa is a popular indian sweet delicacy mainly originated from Mumbai . The recipe extremely simple and is mainly prepared from corn flour or semolina mixture. This sweet got the name from it's texture and colour. Originally it looks like white glossy ice and hence the name given Ice halwa. But gradually it is made in several ways and flavours. I am sharing the most basic one with adding colour to make it more attractive.

This sweet got the name from it's texture and colour. Originally it looks like white glossy ice and hence the name given Ice halwa. But gradually it is made in several ways and flavours. I am sharing the most basic one with adding colour to make it more attractive.

In a heavy bottomed pan take 1&1/2 cup milk, 1 cup sugar, 1/4 cup corn flour and 1/4 cup ghee.

Mix everything well and place in low flame. Stir continuously without forming any lumps.

After 10-15 minutes, the mixture starts to thicken but you have to stir non stop and cook until the mixture turns into a paste consistency. It will take about total 20 minutes to make a lumpy mixture.

Now add 1/4 tsp of orange food colour and 1 tsp ghee.Mix well keeping the flame on low.

Further, add 1/4 tsp cardamom powder and mix well.

Mix till the mixture turns glossy. Don't make the mixture completely dry. It should be like glossy paste.

Transfer the mixture on to butter paper.

Place another sheet of butter paper over it and spread the mixture uniformly with a rolling pin to form a rough square shape. The layer should be thin and uniform.

Peel off the butter paper and sprinkle few chopped pistachios. Again cover with the butter paper and roll lightly to stick the nuts to halwa.

Now cut the ice halwa into squares (along with sheet) once set completely.

Finally, bombay ice halwa is ready to serve. You can store for a week in the refrigerator.
